Reese's Peanut butter Cup Brownies

Yes, Yes I am at it again with my LOVE (and I do mean L-O-V-E) with Reese's Peanut Butter Cups. 

Now I know I did a version of this well over a year ago. You can take a look in this link.

But these my friends are just OOOHHMYGOODNESSYUMMM! 

So with that into here they are:

Ingredients
  1. 1 box brownie mix
  2. 2 eggs
  3. 2/3 cup vegetable oil
  4. 1/4 cup water
  5. 1/2 cup chocolate chips
  6. 9 Reese's peanut butter cups
Instructions
  1. Preheat oven 325 degrees F.
  2. Grease an 8x8 baking dish and set aside.
  3. Stir together brownie mix, eggs, oil, water, and chocolate chips.
  4. Pour half the batter into baking dish.
  5. Align peanut butter cups on top.
  6. Cover with remaining batter and bake for 55 minutes.

Homemade Chocolate Twinkie #Cake

Good afternoon everyone! 

Yes you read the title right. Which I'm sure is why you stopped on by. For those in the US who lost their beloved twinkies when Hostus went under last year it was a very very sad day. I know it was for Teen #1. As it is her only vice. ( Maybe that should be one of her point on her blog.... You can take a look here: http://elsranger.wordpress.com )

So Teen#1 went on a search for how to get something similar at home.

Now this awesome lady above made her cake from a box. ( Oh how I wish says this mama who can never make anything out of a box & have it work. Sigh)

But rest assured I can make it from scratch! ( *... And the crowed goes wild with applause*) Okay maybe the crowed is just The Man & our football team of kids... But that counts right ?!?

So here you go. My Version of:

Chocolate Twinkie Cake:

Ingredients for cake:
2 cups white sugar
1 3/4 cups all-purpose flour
3/4 cup unsweetened cocoa powder
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1teaspoon salt
2 eggs
1 cup milk
1/2 cup vegetable oil
2 teaspoons vanilla extract
1 cup boiling water

Directions

Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 13x9 cake pan. (Baking dish works too)

In a large bowl, stir together the sugar, flour, cocoa, baking powder, baking soda and salt. Add the eggs, milk, oil and vanilla, mix for 2 minutes on medium speed of mixer. Stir in the boiling water last. Batter will be thin. Pour evenly into the prepared pans.

Bake 30 to 35 minutes in the preheated oven, until the cake tests done with a toothpick. Cool in the pans for 10 minutes, then remove to a wire rack to cool completely.

If cake is still too moist pop it in the freezer for about 30 minutes or so to firm it up. 

Filling:

5 tablespoons flour
1 cup milk
1/4 tsp salt
1 teaspoon vanilla
1 cup granulated sugar
1/2 cup shortening
1/2 cup margarine
1/2 tsp salt

Put It All Together:

Make the cake according to the above directions. 

Once cooled turn out onto plate or cutting board. 

Cut the thickness of the cake in half with a large knife using a second plate, remove the top of the cake and set aside.  flip the bottom half of the cake back into the cake pan. 

In a medium saucepan cook 5 T flour, 1 c milk, 1/4 tsp salt until thick, like a Garvey. Remove from heat and add 1 tsp vanilla. Let cool completely in the fridge. 

Meanwhile in a medium bowl, cream together 1 c granulated sugar, 1/2 c crisco, 1/2 c margarine and 1/2 tsp salt.

Add cooled  "Gravey mix"  to creamed ingredients. Whipp all together till you get a nice fluff icing. Like Twinkie filling. 

Spread fluff out onto bottom layer. 

Carefully flip the top layer back onto the bottom half. 

Frost with your favorite chocolate frosting. ( Shhhh don't tell my crowed I used store bought, & just whipped it up a bit to make it more & taste better)



Tada! Twinkie Cake! Teen #2 says it tastes more like the cupcakes you buy. But Whatever. 

This cake is counter friendly, and does not HAVE TO be stored in the fridge.

No-Bake Chocolate Mint Bars



 
OH MY GOODNESS!!! That is the name that these new easy delectable goodness should be called! Now I will be honest and say I did NOT come up with these. One of my many Blog friends did. Her blog is called The spice of Life and you can find the original recipe Here. I have made these twice now and they have been a HIT! Now I may be a little bit bias just because chocolate and mint are my two favorite (besides chocolate and peanut butter of course) combinations.
 
On a little side note I have done this the way I am showing it below with the lined pan with Parchment paper as well as the pan lined with tin foil like I did in my Two-Layer Cookie Fudge it came out of the pan a lot easier with the foil. Probably because I could not figure out how to line the whole pan with parchment paper and have it stay that did not include needing an extra set of hands and lots of tape lol. BUT oh do give it a try!!
 
 
What You Need:
 

 1- 8 inch square pan lined with either part5chment paper or tin foil
1 cup (100 g) chocolate graham cracker crumbs (I used Oreo cookie crumbs)
¾ cup mini chocolate chips
 ¼ cup (20 g) Dutched cocoa powder
½ t coarse sea salt
 ¾ cup sweetened condensed milk
4 oz (115 g) semisweet (60-62% cacao) chocolate, melted
½ – 1 t peppermint extract, to taste
 
Put it Together:
 
 Line Pan with your Parchment paper or tin foil
Take Chocolate and microwave it for 60 seconds on high giving it a stir. It may need another 30 seconds depending on your microwave.
In another bowl mix cookie crumbs, coco, salt together
Take melted chocolate add condensed milk and peppermint extract
 
Add to cooking mixture it will be stiff so don't worry!
Fold in mint chocolate chips
Put combined mixture into pan pressing it down with plastic wrap
Take mixture and chill for at least an hour in the fridge to set
Once set take out of pan cut up and plate
 
Serve and Enjoy!

Chocolate and Maple Glazed Homemade Donuts and Donut Holes

Happy Monday everyone!! Well I have been hard at work the last few days and have decided since you all loved the Homemade Donuts and Donut Holes post sooooo much as did my kids who got to eat them. I thought I would post a few new flavors for everyone to try.

I think I got maybe 2 donut holes out of this batch this time. The Teens had their friends over and before they were even set the donuts were gone. I was lucky to get the few pictures I got lol.

Note To self: DO NOT TELL PEOPLE YOU ARE MAKING DONUTS IF YOU WANT ONE!

Lesson learned!

So I have 2 really easy glazes for you. Most of the stuff you should already have around the house.

What You Need:
 
 
2 cups powdered sugar, divided
5 tbsp. Milk, divided
1 tsp. Vanilla
1/4 cup cocoa powder
2 tbsp. Maple syrup or table syrup 
 
Chocolate Glaze:
 
In small bowl put 1/4 cup cocoa powder
 
Add 1 cup powdered sugar and 2 tbsp. milk
 
Give a good whisk and you have chocolate glaze! When dipping donuts in glaze make sure they are good and cooled and only dip one side. Let sit for about 10 minutes then serve!
 
 
Maple Glaze:
 
1 cup powdered sugar
 
Add vanilla remaining milk and Maple syrup
 
Give a good whisk and you have maple glaze! this you can glaze on both the large donuts and donut holes!
 
Let Stand for 10 minutes.
then serve and enjoy!

Reese's Stuffed Oreos!

Yup you read the title of that right! I am going to show you how to take two very famous snack time treats and put them together into something that will blow your mind!

If you have not figured out yet I love Reese's Peanut butter cups. So when I can put them into anything I am so game. (hey don't judge lol we all have our one thing that we love so much. Me its peanut butter cups. Teen #1 it's Twinkies. Teen #2 its anything chocolate. Including the semi-sweet bakers chocolate right out of the box. To the point I went to get the chocolate for this adventure and we had non! Emergency trip to Wal-Mart here I come!)

I found this recipe floating around Facebook... Well my Sister found it and promptly sent it to me as a YOU MUST TRY THIS ASAP message. So here I am giving this a go and sooo hoping it turns out. If not I still have overly chocolate covered peanut butter cups!

 
What You Need:
 
 
1 pkg of Oreo cookies (I used regular but double stuffed would be really good)
6-8 squares of bakers chocolate melted
12 Reese's Peanut Butter Cups
1 cookie sheet covered with wax paper
 
Put It Together:
 
Take chocolate and put in Microwave safe bowl and heat for 2 min stirring half way through until fully melted


 
Take Oreo's and separate them placing cream side up. Set a side tops to be used latter
 
Take full size Reese and put it on top of cream side Oreo
 
Take another cream side Oreo and put it on top of Reese cup

 
Take Reese stuffed Oreo and with a fork dip into melted chocolate covering all of the Oreo

 
Take sandwich out of chocolate and place on tray covered in wax paper. Repeat till all are done.

 
Take left over Oreo tops put in a zippy bag and crush them

Take crushed cookie and sprinkle on top of sandwiches. Place in freezer for 30 minutes to settle
 
Once set take out of Freezer serve and Enjoy!

Cookie? Cake? Why not have BOTH!!

 
Cookie Brownie Surprise

I came about this actually more out of necessity then anything else. With my huge family of cake lovers it’s really hard for the 2 or 3 that are bonafied cookie monsters. I am not even kidding you mention cookie and from somewhere in the house you will think the Sesame Street Cookie monster was visiting because all you will here is “COOOOOKKKKIEEEE”… So what is a Mama to do but figure out a way to put both the ooie gooie goodness of cake with the oh so delectable taste of cookies. So here it is my Cookie Brownie surprise. I hope you enjoy as much as we do.
 

Supplies:
 

 
 
 
 
 
 
 
 
 
1.       1 tube of refrigerated cookie dough
2.       1 package of mini Reese cups
3.       1 box of prepared brownie mix prepared as directed
4.       1 12x cup muffin tin
5.       Cooking spray
 

Steps:
1.       Preheat oven to 350˚c


 



 
 
2.       Spray muffin cups with cooking spray
Cooking spray is a must or they will stick to the bottom
 

3.       Spoon cookie dough into each cup and mush down











4 .  Place 2 mini Reese cups upside down on cookie dough



 








5.       Put ¾ cup of prepared brownie mix over top of Reese cups

6.       Bake for 18 min

Don't Forget to set that timer!
 










7.       Let cool and serve!
