Cheddar-Bacon Chicken Bake

MMM cheese is all my family heard when they asked me what was for dinner. Then they heard bacon! Oh Mama you are going to give us cheese and bacon for dinner?!? Yes, Yes I am is there a problem with that? Oh no Mama not at all! We love you!

Yes offer my family a combination of their favorite foods and I turn into the best person in the whole wide world. This dinner idea is a really quick and easy dinner that if you don't have leftover chicken you can use you can get the pre-cooked chicken in the meat section from your local store. Honestly I use it a lot!

What You Need:
 
 
2 pkg of Stove Top chicken stuffing
1 lb boneless skinless chicken breasts, cut into bite-size pieces
2 cups frozen cut green beans, thawed, darned
1can condensed cream of chicken soup
1/2 of water
1/3 cup bacon bits
1 cup shredded cheese
 
Put It Together:
 
Put all ingredients except stuffing into a bowl and give a good mix





 
Put in 13x9 baking pan that has been greased
 
Prepare stuffing as directed on box and cover the top of chicken mix with it
 
Bake in a 350 oven for 30 minutes
 
After the 30 min pull out of oven and let sit for about 10 minutes then serve and enjoy!

Cheeseburger Meatball Subs

  YAY for hot water! Last night was the first night we started to get our hot water back. So it was really the first real night of back to cooking in my house. So to celebrate this taken for granted thing I asked everyone what they would like for dinner. I got a unanimous "CHEESEBURGER MEATBALLS! WITH CHEESE SAUCE!!"  Well ok then lol that I can do.

Honestly I am not surprised by this answer mainly that my house LOVES their hamburgers; or hangaburger as the younger ones call it. I have heard whisperings as to what I am getting for Mother's day and it seems that most of my kids think Rachel Ray's Book of Burger's is a very fine idea. Mostly it is a gift for me that I will use for THEM. Apparently this is a win-win situation for all. It kind of makes me giggle at the thought process at such an age but really I wouldn't mind it's being thought of that counts. That and I really like Rachel Ray's stuff.

Now before I give you the good stuff, I need to tell you I have no idea why my kids call the sauce for this "Cheese Sauce." There is no cheese in it or even close to it. The cheese is in the meatballs. But you try arguing with my toddlers and see how far you get lol :)

So here it is:

Cheeseburger Meatball Subs:

What you need:











1 lb. extra-lean ground beef
1 cup cheddar shredded cheese *You can your favorite blend of shredded cheese*
1/4 cup of bread crumbs
1 egg
1/4 cup B.B.Q sauce
1/4 mayo
8 hot dog buns

MAKE IT:

Heat oven to 400
 
 
 
 
 
 
 
 
 
 
Mix first four ingredients until well blended 




 
 
 
 
 
 
 
 
  
 
 
 
 
 
 
 
 
  
 
 
 
 
 
 
 
 
 
 
Spray 13x9 baking pan down with cooking spray

 
 
 
 
 
 
 
 
 
 
Shape meat mixture into about 24 meatballs * if serving more the 4 you will need to double all of the ingredients.
 
 
 
 
 
 
 
 
 
 
Bake for 17 min
 
 
 
 
 
 
 
 
 
 
While meatballs are cooking get a small bowl to start making the sauce

 
 
 
 
 
 
 
 
 
 
In small bowl put the mayo 

 
 
 
 
 
 
 
 
 
 
Add B.B.Q sauce
 
 
 
 
 
 
 
 
 
 
Mix well
 

 
 
 
 
 
 
 
 
 

 
 
 
 
 
 
 
 
 
 
Once meatballs are out of the oven I like to drain them on a plate covered in paper towel
 
Take hotdog bun open it and spread sauce inside of bun
 
 
 
 
 
 
 
 
 
 
Place 2-3 meatballs on bun. Serve and Enjoy!
 
*Please note that you can top these just like you would a hamburger my kids just like them plain and with any side you like :)

Pizza Balls


Who doesn't love pizza right? But when you have little mouths that there's no way that they are going to manage to pick up a normal size slice and have at it, you need to get creative about it.

I have some that like crust. Others that wont even eat close to the crust. My wee ones well, they are just at that age where they pick everything up and fist it into their mouths two handed and look like a chipmunk!

So when my "Awesmazing" (that is a word my oldest coined after camp last year) sister Keeley Saint James found this floating around Facebook it was almost a very nice sisterly demand to give it a try. She clamed it could be the answer to all my pizza troubles.

So here it is:

Pizza Balls:

What you need:










3 cans Pillsbury Buttermilk Biscuits (10 per can),
pepperoni slices,
Either shredded or block cheese, cut in small equal cubes
1 beaten egg,
1 Tbsp. Parmesan,
1 Tbsp. Italian seasoning
1/2 Tbsp. Garlic powder
1 jar pizza sauce
cooking spray
wax paper
13x9 baking pan

Make it:

Put wax paper down over work surface and open biscuits










Flatten biscuits out with the heal of your hand (Great to get the kids help you do!)










Place 1 peperoni in the center of flatten biscuit










Add cheese
 
 
 
 
 
 
 
 
 
 
Top with next peperoni
 
 
 
 
 
 
 
 
 
 
Gather edges of the biscuit and pat together to make a ball
 

 
 
In a small bowl crack and beat egg
 
 
Brush Pizza balls with beaten egg

 
 
 
 
 
 
 
 
 
 
 
 
Mix Italian seasoning, Garlic powder and parmesan
 
 
 
 
 
 
 
 
 
 
Sprinkle mix over Pizza Balls
 
 
 
 
 
 
 
 
 
 
Turn Oven to 350
 
 
 
 
 
 
 
 
 
 
Bake for 18 min

 
 
Remove from oven and let cool for 5 min
 
 
 
 
 
 
 
 
 
 
Serve with Pizza sauce on the side and Enjoy!

Ode To Gooey Grill Cheese!! In Honor of National Grill Cheese Day!

So two little fact about myself:
  1. I am a LOVER of cheese! I mean I L-O-V-E CHEESE!! As I am saying this I have "Green Eggs and Ham" running through my head... "I will eat it in a house, I will eat it with a mouse." Hell, forget the mouse! That requires sharing! "I would steal it from a house, I would steal it from a mouse...." There much better!
  2. Myself and a few of my Kiddlets have a very bad allergy to corn. Yes I said corn. Apparently it is not such a rare allergy as I first thought, its just not widely talked about and most people don't even realize that have this allergy. So as you can well imagine that makes the day to day of cooking very interesting shall we say, mainly because corn is in EVERYTHING!! No joke. I can not even partake in having a stick of gum because "Sucrose" is actually made from corn sugar. Did you know that? I sure as hay didn't till I looked it up and my Dr. Told me. So when it comes to my oh so favorite "Tex-Mex" style of cooking I tend to be just plum out of luck unless I can use flour tortillas. That means no Nachos nothing that would have a corn chip. Let me tell you it is just a plain bummer because I use to eat ALL that kind of stuff and LOVE it! So I KNOW what I am missing out on lol. 

That is what brings me to todays concoction really. This brings my oh so fave things together in a way I can eat it! OH do I ever eat this let me tell you.

So with no further a due I bring you:

Oven -Toasted Salsa Grilled Cheese!

What you need:











8 slices of Italian bread. This will make 4 sandwiches
1/4 cup Miracle whip Original Spread (or any other mayo you have on hand)
1/4 cup salsa (I like the think n' chunky myself)
8 cheese slices *2 per sandwich*
1 cookie sheet

Make it:

Heat oven to 450










Spread bread with Mayo
 
 
 
 
 
 
 
 
 
 
Place 4 bread slices, mayo side down, on cookie sheet; place cheese on bread; then cover with salsa
 
 
 
 
 
 
 
 
 
 
 
 
 
 
 
 
 
 
 
Cover with remaining bread with mayo side up; Bake for 12-13 min, or until golden brown, turning after about 6 min.
 
 
 
 
 
 
 
 
 
 
Once out of the oven let cool for about 2 min. Then serve and enjoy!
