We are gearing up around here for spring to finally show up & stay put. So we are tackling the kitchen & FINALLY painting it. I may even splurge & do a pretty back splash. I know it's just our rental till our home is done but darnit I'm the one that has to look at it all day ;)

Corned Beef Hash : Passover Friendly

Happy Passover Everyone! 

At 7:59 pm this evening (ET) Passover began. 

As you can imagin it's a crazy week for us here. With so much cooking your eyes would pop. The trick is that there is no leavening agents used in this weeks Holiday. 

So my hope is to share a few things with you this week as we make them. 

This little Gem is good for anytime of day, no matter the meal. 

Corned Beef Hash:

1 bag of yellow Green Gient baby potatoes cut into cubs
1 red bell pepper chopped into pieces
1 onion chopped
1 Tbsp. Paperika 
1 can Corned Beef cut into chunks
2 cloves of Garlic
2 Tbsp. Vegetable oil
Salt & Pepper to taste
1 Tbsp. Parsley to garnish 

Put it together:

1. Cook potatoes in enough boiling water to cover them. They should cook till they are just tender. 
2. In food processor coarsely chop Corned Beef. 
3. Once potatoes are done drain them. 
4. In large skillet sauté onion, red pepper, garlic in oil. 
5. Add potatoes & continue to sauté over medium-heat. Stirring occasionally, until brown. Stir in Corned Beef, Paprika, salt & Pepper, then cook. Stirring until brown. 
6. Garnish with parsley & serve.

Had a great trip last week that ended up with me coming home to the "plague" descending on to our home. ( Meaning that super un-awesome super flu bug going around)

I'm at a conference this weekend in Niagra Falls. Again I drove in ANOTHER STORM!! What the Heck Mr. Murphy?!? I did not invite you back to join me on another road trip!

April is Military Kid month

Yes it's that time of year again where we take time to appreciate the "Silent Ranks"  behind our service members. 

April is dedicated to Military Kids everywhere. 

This is to acknowledge all the sacrifices the give to help their military person do what they do. From missed birthdays & special occasions. To never ending of moving and relocating. 

To the deployments where you never know what's going to happen. Our kids do the best they can. 

For that, We thank you.

World Autism Awareness Day #Lightitupblue

Yes today is the day where the world takes a look at Autism. 

I am a Mama of children who are HFA. (High Functioning Autistic.)

Meaning they are super smart wonderful little people, with a few individualized quarks. The main one are un able to read normal social ques, and for mine everything being extremely highly structured for those OCD tendencies. 

They are my children that created their own "theme song" for themselves. Apparently they are not human. 'Cus they are way too cool & special to be just that! Their brains gave them super powers to make them "Super Hero's". Meaning they are extremely analytical. Where calculus & Physic problems can almost all be done in their "Super Hero Brains" & it's fun!

I am as their Mama in complete awe of them.

In 2011 The Centers for Disease Control and Prevention (CDC) updated its estimate of autism prevalence in the United States to 1 in 88 children (1 in 54 boys and 1 in 252 girls). By comparison, this is more children than are affected by diabetes, AIDS, cancer, cerebral palsy, cystic fibrosis, muscular dystrophy or Down syndrome – combined.* 


I hope you join me in bringing awareness to this fast growing disorder. Let people know it's nothing to be scared of, Just something to know about.

Homemade Chocolate Twinkie #Cake

Good afternoon everyone! 

Yes you read the title right. Which I'm sure is why you stopped on by. For those in the US who lost their beloved twinkies when Hostus went under last year it was a very very sad day. I know it was for Teen #1. As it is her only vice. ( Maybe that should be one of her point on her blog.... You can take a look here: http://elsranger.wordpress.com )

So Teen#1 went on a search for how to get something similar at home.

Now this awesome lady above made her cake from a box. ( Oh how I wish says this mama who can never make anything out of a box & have it work. Sigh)

But rest assured I can make it from scratch! ( *... And the crowed goes wild with applause*) Okay maybe the crowed is just The Man & our football team of kids... But that counts right ?!?

So here you go. My Version of:

Chocolate Twinkie Cake:

Ingredients for cake:
2 cups white sugar
1 3/4 cups all-purpose flour
3/4 cup unsweetened cocoa powder
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1teaspoon salt
2 eggs
1 cup milk
1/2 cup vegetable oil
2 teaspoons vanilla extract
1 cup boiling water

Directions

Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 13x9 cake pan. (Baking dish works too)

In a large bowl, stir together the sugar, flour, cocoa, baking powder, baking soda and salt. Add the eggs, milk, oil and vanilla, mix for 2 minutes on medium speed of mixer. Stir in the boiling water last. Batter will be thin. Pour evenly into the prepared pans.

Bake 30 to 35 minutes in the preheated oven, until the cake tests done with a toothpick. Cool in the pans for 10 minutes, then remove to a wire rack to cool completely.

If cake is still too moist pop it in the freezer for about 30 minutes or so to firm it up. 

Filling:

5 tablespoons flour
1 cup milk
1/4 tsp salt
1 teaspoon vanilla
1 cup granulated sugar
1/2 cup shortening
1/2 cup margarine
1/2 tsp salt

Put It All Together:

Make the cake according to the above directions. 

Once cooled turn out onto plate or cutting board. 

Cut the thickness of the cake in half with a large knife using a second plate, remove the top of the cake and set aside.  flip the bottom half of the cake back into the cake pan. 

In a medium saucepan cook 5 T flour, 1 c milk, 1/4 tsp salt until thick, like a Garvey. Remove from heat and add 1 tsp vanilla. Let cool completely in the fridge. 

Meanwhile in a medium bowl, cream together 1 c granulated sugar, 1/2 c crisco, 1/2 c margarine and 1/2 tsp salt.

Add cooled  "Gravey mix"  to creamed ingredients. Whipp all together till you get a nice fluff icing. Like Twinkie filling. 

Spread fluff out onto bottom layer. 

Carefully flip the top layer back onto the bottom half. 

Frost with your favorite chocolate frosting. ( Shhhh don't tell my crowed I used store bought, & just whipped it up a bit to make it more & taste better)



Tada! Twinkie Cake! Teen #2 says it tastes more like the cupcakes you buy. But Whatever. 

This cake is counter friendly, and does not HAVE TO be stored in the fridge.
